Heya,
For me the only difference in managing the 2, is that physically you have to maintain the Dedicated server itself. And less for the VPS. But of course both of them needs proper system administration to optimize and monitor the server operation and services.

There can be some difficulties when transitioning from a VPS to a dedicated server, as the two types of hosting have some significant differences.
Here are a few potential difficulties you may face:
Increased responsibility: With a dedicated server, you are responsible for all aspects of its maintenance and management, including hardware and software updates, security patches, and monitoring. If you are used to having your hosting provider manage these tasks, this may require a shift in your approach to managing your website or application.
Higher costs: Dedicated servers typically cost more than VPS hosting, so you will need to budget for the additional expense.
More complex setup: Setting up and configuring a dedicated server can be more complex than a VPS, as you will need to install and configure the operating system, web server, and any additional software or applications.
Greater technical expertise required: Managing a dedicated server requires more technical expertise than a VPS. You will need to be familiar with server administration tasks such as installing and configuring software, setting up user accounts, and monitoring performance.
Overall, transitioning from a VPS to a dedicated server can be challenging, especially if you are unfamiliar with server administration. Therefore, it may be helpful to seek the assistance of a hosting provider or a technical expert to help with the transition.
